Seriously, how didn’t we think of sweet potato toast earlier?

Who doesn’t love toast? Whether you’re lathering it in vegemite for breakie, or dipping it in soup for lunch it is a comfort food staple.
And just when you thought that toast couldn’t get better – sweet potato toast happened.
It has already been described as a ‘game change’ and ‘the best food news ever’. So what exactly is it?
Well, it’s pretty simple really – you slice sweet potato and put it in a toaster. Yes, it really is as easy as that. In fact, it’s so simple we can’t believe that no one has thought of it before now.
Sweet potato toast is the genius creation of food blogger Kelsey who writes at Little Bits Of.
“A couple of weeks ago I woke up craving avocado toast and thought we had bread but WE DIDN’T! So sad. So I sliced up some taters, made my first sweet potato toast,” she writes.
Kelsey posted a photo of her new creation on Instagram where her followers went into a sweet potato toast induced frenzy. They wanted sweet potato toast too. They wanted it bad.
So how exactly does it work? Kelsey suggests that you slice your sweet potato about ¼ thick and then pop in¬¬to the toaster. You then toast it on high for five minutes or until it browns. Kelsey notes that it might take a couple of goes to get looking it perfect.
As for toppings, well sweet potato toast is as versatile as regular toast, so you can add pretty much anything to it. Kelsey recommends avocado, almond butter, and tuna.
The trend is already taking off with hundreds of Instragram users using the #sweetpotatotoast hash tag to show off their creations.

But are there any health benefits to the delicious trend?
“[Sweet potatoes] are a rich source of vitamin A, dietary fiber and carbohydrate. It has a good range of vitamins and minerals,” she says.
However, she also questions the need to substitute sweet potato for regular toast.
“I wouldn’t say that sweet potato toast is better for you than a good quality bread. They just have different nutritional qualities,” she explains.
Nicholson says that it really comes down to what you enjoy.
For us, right now that’s delicious sweet potato toast with lashings of tuna and avocado. It really is the best thing since sliced bread.
